The fact is food safety measures start the animal is killed or the vegetable is picked. In the special report by Castaldo, J, Canadian Business, This Could Kill You, 00083100, 11/12/2012, Vol. 85, Issue 18, 15 Canadians became very ill from eating meat that was tainted with the E. coli virus. The tainted meat came from a slaughterhouse own by the XL Foods company. This triggered a recall that resulted in over 2000 food products being pulled from the selves. This incident sparked the argument if the large mass production meat and produce companies can be as safe as the smaller more specialized butchers and produce companies can be. What can make the XL Company as safe as the smaller specialized companies. Government regulations and high tech equipment could never take the place of total regard to safe food handling, employee cleanliness, and meticulous care of not cross contaminating utensils. Also, employees handling contaminated meat trimmings not heeding to proper sanitation procedures or even coming in with the flu because they couldn't afford to take off and mishandling the food products could cause mass illness.
