Section 1 Metabolism We will test how the metabolism of yeast changes when limiting the amount of oxygen present. Some fungi can switch from cellular (with oxygen or aerobic) respiration to anaerobic (without oxygen) respiration when the concentration of oxygen in the yeast environment decreases. This process is called fermentation and two common types of fermentations are alcoholic fermentation and lactic acid fermentation.
